    A professor of chemistry wanted to demonstrate the superiority of fresh foods to his class. He purchased “fresh” oranges at a local supermarket and measured their vitamin C content. There was none! Unpleasantly surprised, he traced the oranges back to their source. He found they had been harvested while still green, stored for two years and then artificially colored prior to being sold as “fresh fruit.” This is what the consumer is up against and why purchasing fresh, organic produce is so important.
